Ginger cake
I wanted to try and recreate the Jamaica ginger cake with less sugar and better ingredients. I was very impressed with how this turned out. Sometimes I think it’s a fluke I’ll never be able to replicate. It was a really light sponge and the flavour was so delicious, I also loved the tartness of the lemon drizzle on top. Cucumber, mint and Ginger juice
This is so fresh and gives a good kick. Great for sunny days and when you need a little pick me up. This makes just over 1litre Ingredients 2 whole cucumbers 4 apples A big bunch of mint 2 limes (peeled) A good chunk of ginger (fits in your palm) Method Chop everything enough to fit into your juicer, juice and enjoy! Best served when shared with great people.

Carrot and Cinnamon
I love getting veg into different foods. Organic carrots I actually find quite sweet anyway. You can tell when you roast them how much natural sugar they have in them. I had flavours of carrot cake in my mind when I created these although they turned out quite nutty. Never a bad thing. Cacao and Date
I love the soft texture these create. Again I just tested these out with flavours that I like. Using organic Cacao instead of cocoa as it’s got Magnesium, Iron and Antioxidants, adding extra benefits. Then dates, chia and flax for fibre and omega, as well as a bit of protein. Then sour cherries for an added kick. You don’t need a lot to feel like you’ve had some goodness. The soft texture comes from soaking the dates, so remember to do this ahead of time. Ginger turmeric shots
I find when spring hits I crave juices. The freshness they can bring, the amount you can get into one cup. I'm no scientist but I am aware that when we just things it takes out more of the nourishment as we're not eating the whole fruit. We need that fibre! So I just make sure it's not the first thing that goes into my body and I'm balancing it with other fibre foods too. This recipe is based on one from Yotam Ottelenghi. I love his recipes and I have a lovely collection of his books.
