Apricot and Coconut Energy Balls

If you are more into sweet treats but you don't want anything ultra processed or that gives you a sugar spike, these are great. Also remember that if you are exercising, you will natural have less of a glucose spike. Also making sure there are other ingredients involved, including fibre, this is also a massive help.

Always organic apricots, it's one of those, once you've tried them it's hard to go back. I also try and use organic coconut and almond, check the ingredients list, making sure there's no added nasties.



Ingredients

1 cup organic dried apricots

2/3 cup desiccated coconut (more needed for coating)

1/2 cup ground almonds

1 tsp vanilla extract

1 tbsp chia seeds

2/3 tbsp water (if needed)

2 tbsp maple syrup (if you like it sweeter)


Method

Blits the apricots until they are finely chopped, this will create a sort of sticky paste.

Add the coconut, ground almonds, chia, vanilla and maple if using. Blitz again to combine.

This is the stage you will realise if you need water or not. Check to see if you can roll it into balls, if not add a little water and blitx again until you can combine the mixture.

Roll into balls and either eat straight away. Share with friends, or keep in a sealed container.
