Peanut and Plum flapjack

My amazing friend Stacey has a plum tree in her garden and provided me with a mammoth amount of plums. So I put my thinking hat on. I love flajacks, something about the texture of it I love and then the idea of adding something sweet and jammy, what could go wrong. I also like this recipe because it doesn't require cooking, you just leave it to set in the fridge. Summer recipes when you don't need to turn the oven on is great. I could also just leave the coconut oil in a bowl in the sun to melt. No power needed in this recipe.
This made 12 slices in a small baking tray
Ingredients
2 cups Oats
1 cup Flour (I used plan organic, but oat or similar will work, it's to help glue)
1 cup Nut butter
1/2 Coconut oil
1/4 Maple syrup or Honey
Plum and Chia jam (see recipe)
Method
Add the oats and flour together in a large mixing bowl.
Melt the coconut oil, nut butter and maple syrup in a small pan and add to the dry ingredients.
Combine everything until all the wet is mixed with the dry. You want it to be a consistency that when you squeeze it in your palm it sticks together and doesn't crumble.
Line a baking tray with parchment paper.
Add 3/4 of the mixture to the baking tray and press the mixture down until it is firm.
Add a layer the plum and chia jam, the amount it dependant on how jammy you want it.
Crumble the leftover mixture on the top of the jam.
Put into the fridge to set for about 2 hours then cut into your desired sized slices.
