Lemon and Chia balls

This I created when I was was trying to think what I want to eat in hot weather and that won't be too stodgy or drying. I think the dryer the food, the more water out body uses to process it, meaning the more dehydrated we get. Having something small but nutritional dense is what I find best. The fresh lemon flavour gives a nice punch. I also love how simple they are to make. The most difficult part is zesting the lemons.
This recipe makes around 12 balls depending on what size you want.
Ingredients
1 cup Cashews
1/2 cup Desiccated coconut
2 tbsp Chia seeds
Dash of maple syrup to taste
Juice of 2 lemons
Zest of 1 lemon
Method
Add all the ingredients to a food processor and blitz until you can form a dough with your hands and bring it together.
Roll into balls of your desired size, for added aesthetics you can roll them in leftover coconut.
Enjoy, keep in the fridge and they will last as long as it takes you to eat them I'm sure.
