Stuffed dates

A really simple and delicious snack to have when you need a boost of energy on a hike or during exercise. Dates so good because of their nutritional density, they are packed with fibre, antioxidents and minerals. Yes, they high in natural sugars but you don't need many of them to keep you going.
These are stuffed with almond butter and drizzled with good quality dark chocolate. You can swap and change what you like, thats the beauty of them, cashew butter I also love.
It really is as simple as it sounds. Buy good quality dates, like medjool.
The bigger they are the easier they are to stuff.

Ingredients
Medjool dates
Nut butter
Dark chocolate
Method
Remove seeds from the dates
Add the butter with a teaspoon
Melt the dark chocolate either over a pan of water in a bowl or I have mastered the art of microwaving. Short bursts and once 70% of the chocolate is melted, take it out and stir it continuously until the rest of it is melted.
You can then either dip or drizzle depending on your desired effect and how chocolately you want them to be.
Wait (if you have the patience) until they are set and enjoy. They can keep in a container in the fridge, for likely as long as it take for you to eat them.
