Carrot and Cinnamon

I love getting veg into different foods. Organic carrots I actually find quite sweet anyway. You can tell when you roast them how much natural sugar they have in them. I had flavours of carrot cake in my mind when I created these although they turned out quite nutty. Never a bad thing.


Makes around 10-12 depending on size

Takes about 15mins to make



Ingredients


1 cup ground almonds

1 cup chopped carrot (finely grate if you don’t have a good blitzed)

1 cup dried apricots (organic without sulphates)

1/3 cup almond butter

2 tsp cinnamon

1 tsp ginger

1 tsp all spice


Method


  • Blitz the apricots in their own first (if you don’t have a powerful mixer you can soak to soften in boiling water then blitz everything together)

  • Add the rest of the ingredients and blitz

  • The mixture should be thick enough that you can roll them into balls

  • Roll in your choice of crushed nuts, I used pecans for this recipe

  • Enjoy, they can keep for a long time in to fridge
