
Carrot and Cinnamon

I love getting veg into different foods. Organic carrots I actually find quite sweet anyway. You can tell when you roast them how much natural sugar they have in them. I had flavours of carrot cake in my mind when I created these although they turned out quite nutty. Never a bad thing.
Makes around 10-12 depending on size
Takes about 15mins to make
Ingredients
1 cup ground almonds
1 cup chopped carrot (finely grate if you don’t have a good blitzed)
1 cup dried apricots (organic without sulphates)
1/3 cup almond butter
2 tsp cinnamon
1 tsp ginger
1 tsp all spice
Method
Blitz the apricots in their own first (if you don’t have a powerful mixer you can soak to soften in boiling water then blitz everything together)
Add the rest of the ingredients and blitz
The mixture should be thick enough that you can roll them into balls
Roll in your choice of crushed nuts, I used pecans for this recipe
Enjoy, they can keep for a long time in to fridge
