Cacao and Date

I love the soft texture these create. Again I just tested these out with flavours that I like. Using organic Cacao instead of cocoa as it’s got Magnesium, Iron and Antioxidants, adding extra benefits. Then dates, chia and flax for fibre and omega, as well as a bit of protein. Then sour cherries for an added kick. You don’t need a lot to feel like you’ve had some goodness. The soft texture comes from soaking the dates, so remember to do this ahead of time.


Makes around 10-12 depending on size

Takes around 20mins


Ingredients 


1 1/2 cups of dates

1/3 cup almond butter

1/3 cup of milled flax

1/3 cup of chia seeds

1 tbsp cacao powder

1/3 cup sour cherries


Method 


  • Soak the dates in boiling water for at least 15mins, the longer you leave them, the jammier they get

  • Add all the ingredients to a mixer and blitz

  • You want the mixture to be quite sticky so you can roll it into balls, if too wet, add some more flax, if too dry add a tiny bit of water and blitz again. It’s all about experimenting.

  • Roll into balls and then roll through cacao powder for a nice touch and extra goodness.

  • Refrigerate to firm up and they keep for longer than you’d be able to keep them for.
