Orange and Almond Cake

Do you ever get the taste for something then have to recreate it.
Summer brings cravings of fresh flavours and lightness, and this hit the spot perfectly. I love that there is little faff with the recipe, it just takes a bit of time. So don't be me and read the recipe last minute. I looked up different recipes to get an idea and the adapted it to go with the ingredients I have. This recipe would also work with clementines, and would take less time to boil.
I used a 23cm cake tin and made it one layer.
Ingredients
2 oranges
1 1/4 tsp baking powder
6 large eggs
1 cup unrefined caster sugar
2 3/4 cups of ground almonds
Method
Pre heat the oven to 160 (140 fan).
Boil the oranges whole in a pan of water. Boil for 15mins then throw away the water and boil again for another 15mins. Keep an eye on the water running low. Remove from the heat, throw away the water and leave to cool. 20 mins minimum.
Once cool, chop the oranges into large chunks and remove pips. Put into a food processor, blitz until smooth (ish).
Add the rest of the ingredients and mix until all the ingredients have combined together. I thought my mixer was going to over flow but I managed to just about get there.
Pour mixture into greased cake tin and bake for 45-50mins. Until skewer comes out clean. If I bake a cake in someone else's oven the timings completely change.
Leave to cool in tin. I then spread a small layer of homemade marmalade on top, which went down a treat.
